Abstract
The aim of this study is to compare the young consumers? response on blind among different wine types. The influence of consumer age segment on his/her response is also assessed. Six different commercial wines with very different sensory properties were selected, including red, white and rosé that could be young, reserva or gran reserva, covering a wide varietal selection such as tempranillo, verdejo and garnacha. Physical, chemical and sensory analyses by a trained panel were used to describe the six wines. Degree of liking and emotional response (Nestrud et al. 2016) was rated by two groups of consumers from different age segments: younger (<35) and older (>35). Significant differences were found among the wines in terms of physical, chemical and descriptive sensory analysis. Results show a certain degree of relationship between some physical and chemical parameters and the sensory descriptors of wines. Preliminar results of consumer tests show significant differences among wines and between both age groups.
