At the present time, it is usual in determining diffusion and convective transfer coefficients resort to classical approximate relationships involving dimensionless numbers. These approximate relationships were developed in the past, in order to avoid the difficulties associated with calculations of large series expansions and its corresponding expansion coefficients given by transcendental equations. However, the development of computers has removed these difficulties, so that currently such calculations can be easily performed. In this paper, we propose an iterative methodology that takes advantage of current computational capabilities, avoiding using approximate relationships. On the other hand, we present a drying protocol matching experimental conditions and theoretical conditions of analytical solution in order to obtain correct coefficients values. This proposed methodology was applied to experimental data from carrot drying at different temperatures, showing an adequate behaviour and giving reasonable results. | |
