The olive oil industry in Spain is a world leader in the production and export of olive oil. The EU produced 1, 263,471 tons of olive oil in 2017, of which 51% corresponded to Spain. At present, there are approximately 1,820 oil mills in Spain (MAPAMA, 2017), approximately 82% use continuous extraction systems of 2 and 3 phases that obtain 94% of the total production of olive oil. The industry generates more than 6 million of wet greasy waste (pomace marc and alperujos) that are valued in different ways. The richness of these by-products in nutrients and organic matter make them a valuable amendment that can be used to improve the fertility of agricultural soils, in fact the legislation of fertilizer products, R.D. 535/2017, already includes the dried alperujos and the pomace compost. Within the context of the Circular Economy, the organic waste represents an alternative in the replacement of phosphate rock as a source of phosphorus (P) for the soil. However, the behavior in the soil-plant system of the P from this type of waste will depend directly on the way in which it is found in them. In this work, two P fractionation protocols have been chosen: Modified Williams (1999) and Xiao-ian Huang (2008) to characterize the different forms of P in residues of the olive industry, since the bioavailability, both from the point of view agronomic as environmental, will depend on the chemical form in which this element is found. To achieve these objectives, the monovarietal alperujos of three olive varieties (Arbequina, Picual and Cornicabra) were sampled in several seasons (agricultural campaigns) from an oil mills located in Membrilla (Ciudad Real, Spain). To see how the process affects the composition of the waste, several elaborations have been made with olives of the variety Cornicabra in an experimental extraction line through the three-phase system, ABENCOR, located in the Department of Agricultural Production (ETSIAAB, UPM), where all the variables of the process have been controlled.
